MUSTARD

Mustard microgreens are bold, lively greens known for their distinctive peppery heat. While all varieties share the characteristic pungency of mustard, their intensity can range from a relatively gentle warmth to a sharp, sinus-tingling kick reminiscent of horseradish or wasabi. Flavor also varies by variety, with notes ranging from fresh and mildly mustardy to spicy, earthy, and slightly sweet.

Color and leaf form provide additional variety, from bright green and frilly foliage to deep burgundy and purple-red leaves. Mustard microgreens are especially effective when used as a flavorful accent, adding heat and freshness to sandwiches, meats, seafood, eggs, Asian-inspired dishes, and richer foods that benefit from a sharp counterpoint.

They are best used raw or added just before serving, since their characteristic heat and delicate texture diminish with prolonged cooking.
