BEETS
Beet microgreens bring the familiar earthy sweetness of beets into a tender, colorful green with a milder and fresher flavor than the mature root. Their flavor is earthy and gently sweet, with subtle mineral and spinach-like notes and a clean finish that makes them surprisingly versatile.
While the varieties share a similar flavor profile, their stems and leaves offer distinctive shades of red, burgundy, pink, green, yellow, and gold. This combination of rich color and approachable earthy flavor makes beet microgreens particularly well suited to salads, roasted vegetables, grains, rich proteins, cheeses, and composed plates where they contribute both flavor and visual contrast.
Beet microgreens are best used raw or added near the end of preparation. Their tender leaves and succulent stems provide more substance than very delicate microgreens while still working beautifully as a finishing green.
