AMARANTH
Amaranth microgreens are delicate, mild-flavored greens prized as much for their extraordinary color as for their culinary versatility. Their flavor is gently earthy with subtle beet-like, nutty, and slightly sweet notes, making them easy to pair with both savory and sweet dishes without overpowering other ingredients.
Varieties range from brilliant magenta and burgundy to fresh green and multicolored combinations of green, red, yellow, and pink. With slender stems, tender leaves, and vivid pigmentation, amaranth is particularly well suited to fine-dining presentations, colorful salads, composed plates, and elegant garnishes.
Amaranth is best used raw. Its exceptionally delicate texture does not hold up well to heat. Flavor notes across varieties are quite consistent: Beet-like, nutty, and a subtle sweetness. It’s the colors that make the varieties stand out1
